In this region, most olives are traditionally dedicated to table olive production, celebrated across Spain for their texture and taste (the famous “Manzanilla Cacereña”). Our oil is produced from the smaller olives that are not suitable for table consumption—meaning the fruit retains its most characteristic virtues, concentrated into an EVOO of remarkable purity.
