Each piece is slowly air-cured for a minimum of 18 months, allowing time to naturally develop depth, texture and aromatic complexity.

Store whole pieces in a cool, dry place, ideally between 15°C and 20°C, away from direct light and heat. Once opened, we recommend enjoying the product within a short period to preserve its freshness, texture and aromatic complexity.

For boneless piece, machine-sliced or hand-carved vacuum-sealed portions, keep refrigerated between 4°C and 10°C.
